History of Skopelos in Pensacola

Skopelos is a name synonymous with fine dining in Pensacola for over fifty years. Skopelos at New World is the result of Executive Chef Gus Silivos’ passion for serving great food crafted from the freshest ingredients available on the Gulf Coast.

The Greek Island, Skopelos

Like many Greek immigrant families who moved to Pensacola, the Silivos family hails from the island of Skopelos, located in the in the western Aegean Sea off the eastern coast of Greece. When Chef Silivos’ family opened their Pensacola restaurant in 1959, they named it after their former island home. The restaurant moved east in 1987 from the original spot on Cervantes Street to the Skopelos on the Bay location on Scenic Highway.

Chef Silivos began working in the family restaurant at the young age of 11, working his way through most of the duties in and around the kitchen and dining room. Silivos attended Pensacola Junior College and the University of West Florida, earning a business degree that has served him well. This education left Silivos with a solid foundation, but his heart was drawn back to creating in the kitchen.

Silivos attended the Culinary Institute of America for two years before he returned to Pensacola, where he was instrumental in setting up the culinary program that continues to this day at Pensacola State College.

With its famous scenic views, Skopelos on the Bay remained a Pensacola institution until closing their doors shortly after celebrating their 50th Anniversary in 2009. Chef Silivos continued to serve the people of Pensacola through local favorites Scenic 90 Café and Nancy’s, both of which are still operating on Scenic Highway.

The Rebirth of Skopelos

When the opportunity arose to partner with Jim Homyak of New World Landing & New World Inn, Chef Silivos knew it was the right time to bring back Skopelos. Assuming the position of Executive Chef and Director of Operations for Skopelos at New World and New World Inn, Silivos brings his Mediterranean-inspired take on Southern cuisine to the downtown area of Pensacola.
