Chef Silivos has been serving up great Southern food with a Mediterranean flair for most of his life. From working in the family restaurant as a boy, to attending the Culinary Institute of America, to running a family of Pensacola’s culinary favorites, Chef Silivos is deeply committed to preparing and serving the best the Gulf Coast has to offer.

Chef Silivos is most widely known for his years at the helm of the iconic Pensacola restaurant, Skopelos on the Bay, as well as local favorites Scenic 90 Café and Nancy’s on Scenic Highway.

Chef Silivos now serves as the Executive Chef and Director of Operations for the newly partnered Skopelos at New World and New World Inn.

A Southern Boy in his Southern Ways

Growing up here on the Gulf Coast, Christopher Brandon Melton found a love for great seafood and Southern delicacies as well as all things down home through his big family upbringing.

A passion for cooking was sparked early in his childhood and lead Melton to attend Pensacola Junior College’s Culinary Program. This opened the doors for him to work with some of the finest Chefs along the Gulf Coast.

Raised by wonderful parents and grandparents who all love to cook, Melton’s family gave him a plethora of knowledge about good country cooking. Melton uses this knowledge and a fire for culinary creativity to provide great food in a charming way to the Pensacola area.
